The most imaginative giardiniera: the ingredients vary with the seasons and are complemented by the sweetness of fruit, pears and apples. The vegetables are also unusual: Jerusalem artichoke, celeriac (in autumn and winter), trombetta courgettes and gherkins or green asparagus (in summer). After sweet and sour pickling, they are preserved in extra virgin olive oil and sunflower oil.
