Campofiorin is produced with a double fermentation. 25% of grapes of the same variety, dried for 6 weeks, are added to the wine produced from fresh grapes. This leads to a second fermentation that produces a structured, soft, rich, and extremely captivating wine, yet much more immediate and accessible than Amarone.
GRAPE VARIETIES:
Corvina 70%, Rondinella 25%, Molinara 5%
Campofiorin can age for over 10 years like a great wine, while still being enjoyable in its youth. It is versatile in food pairings, perfect with aged cheeses.
Recommended with: grilled red meats, roasts, stewed red meats, game, aged cheeses, pasta dishes with meat sauce.
